ジャムの脱気殺菌 ― 2011/09/15 21:35
たくさんジャムを作ると保存期間の事が気になりますよね～～
誰かにプレゼントする時も保存期間が気になるので、私は脱気殺菌しています
脱気殺菌とは・・・・・・・・・
ジャムとフタの間の間に残る空気を抜く目的で行ないます。瓶の内部を水蒸気で満たして空気を追い出します。冷めると水蒸気は液体に戻り、瓶の中は真空（減圧）状態になります。そうすると、細菌が繁殖するのに必要な酸素が少ない状態になるので、長期間保存が可能になります
では瓶の煮沸消毒から紹介します
①瓶が隠れるくらいの水を入れ加熱します
②沸騰してから10分くらい煮ます（蓋は劣化を防ぐため3分程で良い）

③熱湯に注意しながらトングなどで引き上げ、清潔なふきんやキッチンタオルの上で乾かします
ジャムを詰める時に温かい状態なるようにタイミングを見ながら作業してください
④手早く、熱いジャムを瓶の口から5ｍｍ～1cmぐらい下がったくらいまで詰めます
この時、瓶の口の周りに付いたジャムはきれいに拭き取るのが重要ポイント
⑤瓶の半分くらいのお湯を張り、ゆるく蓋をして鍋に入れます
鍋のふたをして10分ほど煮沸します
⑥蒸し終わったら、ゴム手袋とふきんを使って手早く蓋をきつく締めます
蓋の中央が少し凹めば成功です
⑦瓶を逆さにして自然に冷まします
逆さにするのはジャムの熱で蓋も殺菌するためです
1年保存する場合は材料と同量の砂糖を使うそうですが、私は50％の砂糖を使っています
だから半年は大丈夫かな？
上白糖よりグラニュー糖の方が癖が無く素材の味が生きるそうですよ
